CHEESE BOX 63 –
July 24
Welcome to our Cheese box 63 – July 24!
Welcoming Fernglen, a new cheese maker!
The thing we like to do most is to introduce a cheesemaker, and it’s a huge welcome to Fernglen from the Wairarapa. They first looked at dairy sheep in 2015, and they are now the first dairy farm to become SPCA Animal Welfare Certified. They have slowly been expanding their range of sheep dairy products, and we are thrilled to bring you their first cheese.
Congratulations Leanne!
All hail Cheese Wheeler Leanne Havill who not only subscribes to our boxes but also has fun making her own cheeses. She has obviously applied her nursing skills because she won a Silver Medal in the last NZ Champions of Cheese Awards for her ‘Leanneta’ Fresh Unripened Cheese under the ‘Curds and Whey Amateur category’. Over the years she has made an amazing array of styles and we’re hoping that one day we’ll be able to bring you a Leanneta in a box. Go Leanne! LABNEH – FROM FERNGLEN
We believe this is only the third labneh made in NZ and it’s excellent. Labneh is a Middle Eastern style that you can use like cream cheese (dips, pizza, bagels…), but it has half as much fat, about 40% more protein, and contains probiotic cultures. It suits a Sauvignon Blanc, pomegranate juice, or a citrusy pale ale.
Region: Wairarapa. Type of milk: sheep.
KALLANEY BLUE – FROM THE CHEESE BARN
A creamy Roquefort style blue with a medium-strong flavour and rich veining. Dig out a big Cabernet Sauvignon or Merlot, a cider, a lager, or a cherry juice, and some nuts like walnuts, almonds, or hazelnuts.
Region: Waikato. Type of milk: cow.
CHEVRE LOG – FROM CILANTRO CHEESE
We love this delicious hand-made goat cheese log. Crumble over pasta, roast vegetables, or just smear on some bread. Try it with a dry Rose, or maybe a saison, or a lightly-flavoured kombucha.
Region: Waikato. Type of milk: goat.
VINTAGE CUMIN – FROM KARIKAAS
A Batavian cheese! A Dutch classic inspired by cumin from Indonesia. This is vintage because it’s aged for at least a year. Pair with a Chardonnay, a Merlot, or with a brown ale, or jasmine green tea.
Region: Canterbury. Type of milk: cow.
