Welcome to our Cheese box 74 – May 25! 

WELCOME TO WHITE HORSE CHEESE!

It has been a project of several months (or years) to convince owners Lynne and Martyn to share their stunning craft cheeses with you.

So, it’s a huge welcome to the Cheese Wheel movement to White Horse, named after the famous white horse carved into a hillside in South Canterbury. Based in Waimate, the founders are Martyn (with over 30 years as a food technologist and microbiologist) and Lynne (with over 25 years as an entrepreneur). They already have a dizzying array of styles on offer, and we will certainly feature some of those in the coming months.

GORGONZOLA – FROM VIAVIO ITALIAN CHEESE

A spreadable creamy blue, this Gorgonzola is comparatively mild with a delicate flavour. It is an Italian style made from unskimmed cow’s milk by Flavio and Flavia (who founded Viavio) local area. Match with a medium strength IPA, a soft red or rose, and a slice of seasonal apple or pear.

Region: Nelson-Tasman. Type of milk: cow

CHILI MARINATED GOATS – FROM CILANTRO CHEESE

A delicious marinated cheese made by Suri, the talented cheese maker from Cilantro. It can be added to a salad or simply spread on some bread, it goes well with a crisp white wine, a cider, an IPA, or a kombucha that can cut through the chili.

Region: Waikato. Type of milk: goat

MERLOT CHEDDAR – FROM WHITE HORSE CHEESE

Now here is something different, a cheddar aged in Merlot! The combination of creamy cheese and the luscious notes of the Merlot wine delivers a delicious and spectacular-looking cheese. Double down with a glass of Merlot, a Belgian Tripel, or a black coffee.

SAURA RED – FROM LITTLE RIVER ESTATE

Another spectacular cheese new to us. Saura Red, has a striking orange colour, this coming comes from annatto, a natural food colour. The cheese is rich and creamy with a smooth mouth feel. The natural rind has a slight earthy flavour this combined with a slight spiciness balanced with a slight saltiness and a hint of blue. Match it with a Pinot Gris, a lager or a dry lemonade.
